Localism is consumer prioritization of local goods and services both literally and in terms of culture and identity. In foodservice this can manifest in a variety of ways such as local sourcing of goods and emulation of local, traditional cuisines. In uncertain times politically and economically, products and services of a local origin or theme have offered familiarity and reassurance to consumers.
